Mozzarella sticks coated in panko, air fried to a perfect golden crunch. Quick and delicious for any occasion.

# Ingredients:

→ Dairy

01 - 8 mozzarella cheese sticks

→ Coating

02 - 80 grams all-purpose flour
03 - 2 large eggs
04 - 100 grams panko bread crumbs

→ Seasonings

05 - 0.5 teaspoon kosher salt
06 - 0.25 teaspoon ground black pepper
07 - 0.5 teaspoon garlic powder
08 - 0.5 teaspoon dried oregano
09 - 0.5 teaspoon paprika

→ Other

10 - Olive oil spray

# Steps:

01 - In a shallow bowl, combine the all-purpose flour, kosher salt, and black pepper. Set aside.
02 - In a separate shallow dish, whisk the eggs until smooth.
03 - In a third shallow bowl, blend panko bread crumbs with garlic powder, dried oregano, and paprika until evenly combined.
04 - Slice each mozzarella cheese stick in half to create 16 pieces.
05 - Working one piece at a time, coat a cheese stick in the flour mixture, tapping off any excess. Dip into the beaten eggs, ensuring complete coverage, then allow excess to drip off. Dredge in the seasoned breadcrumb mixture, pressing gently to adhere.
06 - Arrange the coated cheese sticks on a parchment-lined tray and freeze for at least 30 minutes. Refrigerate the egg mixture between uses.
07 - After freezing, repeat the egg and breadcrumb coating process for each stick. Return the tray to the freezer for an additional 30 to 60 minutes to ensure firmness.
08 - Preheat the air fryer to 199°C for 5 minutes.
09 - Lightly coat the air fryer basket with olive oil spray. Place mozzarella sticks in a single layer, leaving space between each piece. Spray the tops of the sticks lightly with olive oil spray.
10 - Cook at 199°C for 5 to 8 minutes, or until breading is golden and crisp and cheese is visibly bubbling. Work in batches as needed.

# Additional Notes:

01 - Freezing the coated mozzarella sticks twice prevents cheese from oozing out during air frying, yielding a crisp exterior and a perfectly melted centre.
