Apple Cucumber Crunch Mix (Print)

Juicy diced apples and cucumbers with warm walnuts in a sweet-tangy maple-lemon mix for a cool summer side.

# Ingredients:

→ Salad Components

01 - 1/4 cup walnuts, toasted and crumbled
02 - 2 cucumbers, diced (English variety)
03 - 2 apples, cut into cubes

→ Dressing Components

04 - 1 tsp olive oil (extra virgin)
05 - 1/4 tsp salt
06 - 2 tbsp lemon juice (freshly squeezed)
07 - 1 tbsp maple syrup (natural)

# Steps:

01 - Stir together the lemon juice, maple syrup, olive oil, and salt in a small dish until smooth.
02 - Wash the cucumbers and apples under running water. Dice them into small chunks, whether peeled or unpeeled—it’s your call.
03 - Toss the diced apples, cucumbers, and toasted walnuts into a big mixing bowl.
04 - Drizzle the mixed dressing on top, and gently toss so everything gets coated. Serve it right away.

# Additional Notes:

01 - Toast the walnuts in a dry skillet on medium heat for about 3–5 minutes until they smell nutty and turn golden. Keep an eye on them so they don’t burn.
02 - For crunch, pick apple types like Granny Smith, Honeycrisp, or Ambrosia.
03 - To keep it crisp, chop the cucumbers and apples right before eating.
04 - Want it tarter? Add a splash more of lemon juice. Prefer it sweeter? A bit more maple syrup should do!
