Combine soy sauce, sriracha, honey, rice vinegar, olive oil, garlic powder, smoked paprika, and ground black pepper in a large bowl. Add chicken pieces and toss to evenly coat. Cover and refrigerate for a minimum of 30 minutes, preferably up to 4 hours.

In a separate bowl, mix mayonnaise with sweet chili sauce, sriracha, lime juice, and honey if sweetness is desired. Stir until completely smooth. Reserve for serving.

If using wooden skewers, soak them in water to prevent burning. Thread marinated chicken onto skewers, leaving space between each piece for even cooking.

Set grill or grill pan to medium-high heat. Lightly oil the grates to prevent sticking.

Arrange skewers on the hot grill and cook for 10 to 12 minutes, turning periodically for an even char. Brush skewers with some of the bang bang sauce just before removing from the grill.

Transfer cooked skewers to a platter. Drizzle with remaining bang bang sauce, scatter with chopped herbs, and serve alongside lime wedges.
