Chicken Cornbread BBQ Dish (Print)

Flavorful ground chicken mixed with tangy BBQ sauce under fluffy golden cornbread and gooey cheddar cheese - everything you need in one pan.

# Ingredients:

→ Filling

01 - 15 oz can of tomato sauce
02 - 1 cup bbq sauce
03 - 1 medium green bell pepper, diced
04 - 1/2 yellow onion, finely diced
05 - 1 lb ground chicken

→ Cornbread Topping

06 - 1/4 tsp salt
07 - 1/3 cup granulated sugar
08 - 1 large egg
09 - 1/4 cup melted butter (unsalted)
10 - 1/2 cup cornmeal (yellow)
11 - 2 cups cheddar cheese, grated
12 - 1 tsp baking powder
13 - 1/2 cup all-purpose flour
14 - 1/2 cup full-fat milk

# Steps:

01 - Set the oven heat to 400°F (200°C).
02 - Coat a square 9x9 dish with nonstick spray.
03 - In a big pan, mix ground chicken with onions and chopped green peppers over medium. Let it cook for 5-6 minutes until done.
04 - Stir in tomato sauce and bbq sauce with the cooked mix. Bring to a boil, then lower the heat and let it simmer for 5 minutes.
05 - Stir together milk, flour, cornmeal, sugar, salt, egg, melted butter, and baking powder in a large bowl till smooth.
06 - In your dish, spread out the meat mix first, followed by an even layer of cheese. Pour the batter on top.
07 - Bake for 30-35 mins in the hot oven till the cornbread is golden.
08 - Take the casserole out and let it rest for about 5 minutes before serving.

01 - Take it out of the oven only when the cornbread top is a nice golden color.
