Preheat oven to 200°C (400°F).

Slice the beef into strips approximately 1.25 cm wide. If using bacon, cut slices into thirds.

Fill each pitted date with chopped rosemary or thyme. Optionally, wrap each date with a bacon piece before enclosing it with beef slices.

Generously season each beef-wrapped date with salt and pepper.

Arrange the wrapped dates seam-side down on a parchment-lined baking tray and bake for 20-25 minutes or until beef is cooked through and edges are crispy.

Serve warm, optionally drizzling with any released pan juices.
