Chicken roasted upright with beer, carrots, potatoes, and bold seasonings for juicy, aromatic results.

# Ingredients:

→ Chicken & Vegetables

01 - 1 whole chicken (1.4–1.8 kg)
02 - Kosher salt, to taste
03 - Freshly ground black pepper, to taste
04 - 3 large carrots, peeled and cut into 5 cm pieces
05 - 1 large onion, cut into wedges
06 - 450 g baby potatoes, quartered
07 - 1 can (355 ml) beer
08 - 2 tablespoons extra-virgin olive oil

→ Rub

09 - 1 tablespoon chili powder
10 - 1 teaspoon ground coriander
11 - 1 teaspoon garlic powder

# Steps:

01 - Preheat the oven to 200 °C with the rack positioned in the lower third.
02 - Pat the chicken dry with paper towels and season all over with kosher salt and freshly ground black pepper. Set aside at room temperature for 30 minutes.
03 - In a small bowl, mix together chili powder, ground coriander, and garlic powder.
04 - Drizzle the chicken with extra-virgin olive oil and rub the spice mixture evenly over the surface.
05 - Arrange carrots, onion wedges, and quartered baby potatoes in a large baking pan. Season vegetables with salt and pepper, then pour approximately 120 ml of beer over them.
06 - Pour out about half the beer from the can. Carefully insert the open beer can into the cavity of the chicken, positioning it upright in the center of the pan over the vegetables.
07 - Transfer the pan to the oven. Roast until a meat thermometer inserted into the thickest part of the thigh and breast registers 71 °C, approximately 1 hour.
08 - Remove the chicken from the oven and let rest for 10 minutes before carving and serving.

# Additional Notes:

01 - For optimal flavor and tenderness, allow the seasoned chicken to rest at room temperature before roasting.
