Preheat the oven to 190°C. Line a baking sheet with parchment paper or lightly grease it.

Slice the pears in half lengthwise and remove the cores using a melon baller or spoon. Arrange the pear halves cut side up on the prepared baking sheet.

In a mixing bowl, combine the crumbled blue cheese, toasted chopped walnuts, and 1 tablespoon honey. Stir until the mixture is fully blended.

Spoon the cheese mixture into the center of each pear half, gently pressing to pack the filling.

Drizzle balsamic vinegar over the filled pears and sprinkle with ground black pepper. Bake for 20 to 25 minutes until the pears are tender and the cheese is bubbling.

Remove the pears from the oven. Drizzle with extra honey and garnish each half with fresh thyme sprigs. Serve warm.
