Blueberry Muffin Energy Bites (Print)

Nutritious no-bake treats with oats, blueberries, and cashew butter that capture the flavor of blueberry muffins in bite-sized form.

# Ingredients:

→ Dry Ingredients

01 - 2 cups old-fashioned oats
02 - 3/4 cup whole organic flax seeds
03 - 1 cup dried blueberries or 2 pints fresh blueberries
04 - 1/2 cup unsweetened coconut flakes
05 - 1 teaspoon ground cinnamon
06 - 1/2 cup dark chocolate chips
07 - 1 scoop protein powder (optional)

→ Wet Ingredients

08 - 1/3 cup raw honey
09 - 3 tablespoons Pichuberry Puree
10 - 1 cup cashew butter or cookie butter
11 - 1/2 teaspoon vanilla extract

# Steps:

01 - If using fresh blueberries, dry them in the oven. Wash blueberries and pat dry with a paper towel. Preheat oven to 225°F (110°C). Line baking sheets with parchment paper and spread blueberries in a single layer without touching. Bake for 4 hours.
02 - In a large bowl, combine old-fashioned oats, flax seeds, blueberries (dried or fresh), coconut flakes, dark chocolate chips, ground cinnamon, and protein powder (if using). Whisk thoroughly to mix.
03 - Add raw honey, Pichuberry Puree, cashew butter, and vanilla extract to the dry mixture. Stir thoroughly using a spatula or hands until the ingredients are well combined.
04 - Line a baking sheet with wax or parchment paper. Use a cookie scoop (1 1/2 tablespoon size) to scoop the mixture, pressing firmly against the bowl to pack the mixture tightly. Roll scoops into balls and place them on the prepared baking sheet.
05 - Allow the rolled energy bites to set on the baking sheet for 1 hour, or place them in the freezer for 30 minutes to firm up.
06 - Store the bites in an airtight container. They can last for several weeks, or be frozen for longer storage.
