If using fresh blueberries, dry them in the oven. Wash blueberries and pat dry with a paper towel. Preheat oven to 225°F (110°C). Line baking sheets with parchment paper and spread blueberries in a single layer without touching. Bake for 4 hours.

In a large bowl, combine old-fashioned oats, flax seeds, blueberries (dried or fresh), coconut flakes, dark chocolate chips, ground cinnamon, and protein powder (if using). Whisk thoroughly to mix.

Add raw honey, Pichuberry Puree, cashew butter, and vanilla extract to the dry mixture. Stir thoroughly using a spatula or hands until the ingredients are well combined.

Line a baking sheet with wax or parchment paper. Use a cookie scoop (1 1/2 tablespoon size) to scoop the mixture, pressing firmly against the bowl to pack the mixture tightly. Roll scoops into balls and place them on the prepared baking sheet.

Allow the rolled energy bites to set on the baking sheet for 1 hour, or place them in the freezer for 30 minutes to firm up.

Store the bites in an airtight container. They can last for several weeks, or be frozen for longer storage.
