Boston Cream Pie Cookies (Print)

Sandwich cookies filled with vanilla frosting and topped with silky chocolate ganache.

# Ingredients:

→ Dough

01 - 125 grams all-purpose flour
02 - 45 grams unsweetened cocoa powder
03 - 100 grams granulated sugar
04 - 55 grams brown sugar
05 - 115 grams unsalted butter, softened
06 - 1 large egg
07 - 1 teaspoon vanilla extract
08 - 0.5 teaspoon baking powder
09 - 0.25 teaspoon salt

→ Filling and Topping

10 - 120 grams vanilla frosting
11 - 120 grams chocolate ganache

# Steps:

01 - Set oven to 175°C and line a baking sheet with parchment paper.
02 - In a mixing bowl, blend flour, cocoa powder, baking powder, and salt.
03 - In a separate bowl, cream together softened butter, granulated sugar, and brown sugar until light and fluffy.
04 - Incorporate the egg and vanilla extract into the creamed mixture, mixing thoroughly.
05 - Gradually fold the dry ingredients into the wet mixture until just combined.
06 - Drop tablespoon-sized rounds of dough onto the prepared baking sheet, spacing evenly.
07 - Bake for 10–12 minutes until set. Remove from oven and allow to cool completely on a wire rack.
08 - Once cooled, spread vanilla frosting over the flat side of half the cookies.
09 - Top each frosted cookie with another cookie to form a sandwich.
10 - Drizzle chocolate ganache across the tops of the sandwich cookies. Allow ganache to set before serving.
