Breakfast Bagel Egg Spinach (Print)

Bagel with eggs, ricotta, spinach, cheddar, and chives—quick and hearty, ideal for a busy weekday morning.

# Ingredients:

→ Bagel Base

01 - 3 plain or flavoured bagels, sliced in half

→ Egg and Cheese Filling

02 - 2 large eggs
03 - ½ cup ricotta cheese, well drained
04 - ½ cup mild cheddar cheese, grated
05 - 1 cup baby spinach, roughly chopped
06 - 2-3 tablespoons fresh chives, finely chopped
07 - 1 teaspoon Dijon mustard
08 - ½ tablespoon garlic powder
09 - ½ teaspoon salt
10 - ¼ teaspoon freshly ground black pepper

→ For Assembling

11 - 2-3 tablespoons unsalted butter, softened

→ Optional Garnishes

12 - Hot sauce
13 - Sliced avocado
14 - Crispy cooked bacon

# Steps:

01 - In a medium bowl, whisk together eggs, well-drained ricotta, Dijon mustard, garlic powder, salt, and black pepper until thoroughly combined.
02 - Gently fold in chopped spinach, chives, and grated cheddar cheese to create a thick, cohesive mixture.
03 - Carefully cut each bagel in half. Evenly distribute 2-3 tablespoons of the egg mixture onto the bottom half of each bagel. Optionally, sprinkle additional cheddar on top of the filling.
04 - Spread softened butter on the cut side of each bagel top.
05 - Arrange the bagel halves in an air fryer basket, placing the buttered tops cut side up. Air fry at 200°C for 8–10 minutes, or until the egg mixture is set and the tops are golden.
06 - Using tongs, carefully remove the bagels. Top with desired garnishes such as hot sauce, sliced avocado, or crispy bacon. Close each sandwich with the bagel top and serve immediately.

# Additional Notes:

01 - Ensure ricotta is thoroughly drained to prevent a watery filling.
02 - Bagel sandwiches can also be baked at 175°C for 10–12 minutes as an alternative to air frying.
