Broccoli Apple Crunch (Print)

Crisp broccoli bits mixed with sweet apples and tangy cheddar in a smooth yogurt sauce - filling and good for you.

# Ingredients:

01 - 32 oz bag of pre-cut broccoli florets (about 6 cups)
02 - 1 small-sized red onion
03 - ¾ cup of plain, fat-free Greek yogurt
04 - 1/2 cup of cheddar cheese, shredded
05 - 2 cups of diced little Rockit apples
06 - 2 tablespoons of light mayo
07 - 1/2 teaspoon parsley flakes
08 - 1/2 teaspoon salt

# Steps:

01 - Chop broccoli into small bites if they're large, or go ahead with the pre-cut ones. Cut up the Rockit apples and finely dice your red onion.
02 - In a big bowl, toss together the broccoli, onion, diced apples, and shredded cheese until evenly mixed.
03 - In a small bowl, stir together light mayo, yogurt, salt, and parsley until they're blended smoothly.
04 - Pour the creamy dressing over the veggie mix and toss everything so each piece gets coated well.
05 - You can eat it right away or store it in a tightly sealed container in the fridge for up to five days.

# Additional Notes:

01 - Keep the salad fresh by storing it in a sealed container for up to five days. The lack of lettuce means it won’t turn soggy!
02 - When cutting broccoli, chop near the base to prevent the florets from unraveling and making a mess.
