Cajun Chicken Alabama Sauce (Print)

# Ingredients:

→ Cajun Spiced Chicken

01 - 4 skinless, boneless chicken breasts
02 - 1 tablespoon fresh lemon juice
03 - 2 tablespoons olive oil
04 - 1 tablespoon Cajun seasoning
05 - 1/4 teaspoon cayenne pepper (use less if you'd like it mild)
06 - 1 teaspoon smoked paprika
07 - 1/2 teaspoon onion powder
08 - 1/2 teaspoon garlic powder
09 - Salt and pepper, adjust to your taste

→ Creamy White BBQ Sauce

10 - 1 cup mayo
11 - 1 teaspoon lemon juice
12 - 2 tablespoons apple cider vinegar
13 - 1 tablespoon Dijon mustard
14 - 1/4 teaspoon cayenne pepper
15 - 1/2 teaspoon onion powder
16 - 1/2 teaspoon garlic powder
17 - Salt and black pepper to suit your taste
18 - 1 tablespoon finely chopped parsley (optional garnish)

# Steps:

01 - Get your grill warmed up to medium-high (around 400°F or 200°C). Grab a bowl and combine smoked paprika, Cajun seasoning, onion powder, garlic powder, cayenne, a pinch of salt, and some black pepper. Coat the chicken with olive oil, then rub the spice mix all over it. Add a squeeze of lemon juice and set aside for about 10-15 minutes.
02 - Toss the seasoned chicken onto the grill. Let it sizzle for 6-7 minutes per side, keeping an eye out for an internal temp of 165°F (75°C). Take the chicken off when done and let it rest before serving.
03 - Take another bowl and mix mayonnaise, apple cider vinegar, Dijon mustard, lemon juice, onion powder, garlic powder, cayenne, plus a pinch of salt and black pepper. Pop the mixture into the fridge for 15-20 minutes to bring all the flavors together.
04 - Drizzle the creamy sauce over the chicken or use it as a dip on the side. Sprinkle some parsley on top if you like a pop of color!

# Additional Notes:

01 - Prefer less heat? Just cut back on the cayenne pepper in the rub and sauce.
02 - No grill? No worries! Use a stovetop griddle or bake the chicken at 400°F (200°C) for 20-25 minutes.
