Juicy steak bites tossed in Cajun spices, seared, then coated in rich garlic butter and fresh parsley.

# Ingredients:

→ Cajun Seasoning Blend

01 - 1 tablespoon smoked paprika
02 - 1 1/2 teaspoons kosher salt
03 - 1 1/2 teaspoons garlic powder
04 - 1 teaspoon onion powder
05 - 1/2 teaspoon black pepper
06 - 1/2 teaspoon dried oregano
07 - 1/2 teaspoon cayenne pepper
08 - 1/2 teaspoon packed light brown sugar
09 - 1/4 teaspoon dried thyme

→ Steak Bites

10 - 680 grams strip steak, sirloin, or ribeye
11 - 2 tablespoons vegetable oil, divided
12 - 3 tablespoons unsalted butter
13 - 5 cloves garlic, finely minced or grated
14 - Minced fresh parsley, for garnish

# Steps:

01 - Slice steak into approximately 5-centimetre pieces and transfer to a large mixing bowl.
02 - In a small bowl, mix smoked paprika, kosher salt, garlic powder, onion powder, black pepper, dried oregano, cayenne pepper, brown sugar, and dried thyme. Add seasoning blend to steak and toss until well coated.
03 - Heat a large heavy-bottomed skillet over medium-high heat for several minutes until thin wisps of smoke are visible.
04 - Add 1 tablespoon vegetable oil to the skillet. Arrange half of the steak pieces in a single layer without crowding. Sear undisturbed for 2 minutes, turn, and sear another 2 minutes until deeply browned. Transfer to a plate. Repeat with remaining oil and steak.
05 - Lower heat to medium-low. Add unsalted butter to the same skillet and let it melt. Stir in minced garlic and cook for 30 seconds, stirring to release browned bits from the pan.
06 - Turn off the heat. Return steak bites to the skillet and toss well to coat in garlic butter. Serve immediately, garnished with minced fresh parsley.

# Additional Notes:

01 - For smaller bites, cut the steak into 2.5-centimetre pieces and reduce searing time slightly.
02 - The heat level of the Cajun blend can be tailored to personal preference.
