Carrot Potato Creamy Soup (Print)

# Ingredients:

01 - 3 large carrots, peeled and chopped
02 - 3 medium potatoes, peeled and diced
03 - 1 small onion, diced
04 - 2 cloves garlic, minced

05 - 1 litre vegetable broth or chicken broth
06 - 240 millilitres milk or heavy cream

→ Fat

07 - 30 grams butter or olive oil

→ Seasonings and Garnishes

08 - 1 teaspoon salt, or to taste
09 - 0.5 teaspoon freshly ground black pepper
10 - 0.5 teaspoon dried thyme or fresh thyme, plus extra for garnish
11 - 0.5 teaspoon smoked paprika, optional
12 - 60 grams shredded cheddar cheese, optional

# Steps:

01 - In a large pot, heat butter or olive oil over medium heat. Add diced onion and cook until softened, approximately 3 minutes. Stir in minced garlic and sauté for an additional 30 seconds.
02 - Incorporate the chopped carrots and diced potatoes into the pot. Season with salt, black pepper, dried thyme, and smoked paprika if using. Stir well to combine the flavours.
03 - Pour in vegetable broth and bring the mixture to a boil. Reduce heat and simmer uncovered for 20 to 25 minutes, until carrots and potatoes are tender when pierced with a fork.
04 - Using an immersion blender, puree the soup in the pot until completely smooth. Alternatively, carefully blend in batches using a standard blender, then return the soup to the pot.
05 - Stir in milk or cream and gently reheat without boiling. Taste and adjust seasoning as needed. For a cheesy variation, incorporate shredded cheddar and stir until melted.
06 - Ladle soup into bowls and garnish with fresh thyme, additional ground black pepper, or extra cheese as desired. Serve hot.
