Beefy Cheese Tortellini Enchilada (Print)

A yummy crossover meal mixing cheese-filled pasta with spicy beef, zesty enchilada sauce, and melted cheese for an easy dinner option.

# Ingredients:

→ Pasta and Meat

01 - 9 oz cheese stuffed pasta rings
02 - 1 lb minced beef

→ Veggies and Flavor Base

03 - 1 small diced onion
04 - 2 cloves crushed garlic

→ Spice Mix

05 - 1 tablespoon hot pepper mix
06 - 1 teaspoon crushed cumin seeds
07 - 1 teaspoon sweet red spice
08 - ½ teaspoon table salt
09 - ½ teaspoon cracked dark peppercorns

→ Toppings and Liquid

10 - 1 (10 oz) tin taco sauce (either color)
11 - 1 cup grated Italian soft cheese
12 - 1 cup grated yellow cheese
13 - ¼ cup tangy white cream

→ Finishing Touch

14 - Leafy green herbs, snipped

# Steps:

01 - Follow packet timing for the stuffed pasta. Empty water and put aside.
02 - Using a wide pan on medium flame, cook minced beef until no pink shows. Pour off any extra oil.
03 - Throw in onion and garlic with meat. Let cook until onions turn soft, about 2-3 mins.
04 - Mix all spices into the pan. Keep stirring for a minute to wake up the spices.
05 - Pour in taco sauce and let bubble for 5 mins. Toss in the cooked pasta rings to coat them well.
06 - Sprinkle both cheeses on top. Cover pan and wait 2-3 mins on low heat until they melt.
07 - Turn off heat, mix in the tangy cream. Scatter herbs on top and serve while hot.
