01 -
Heat the oven to 375°F. Cover a baking tray with parchment paper.
02 -
Cut the dough into 6 even pieces. Use a rolling pin to shape each one into a circle, square, or rectangle at least 6 inches wide.
03 -
In a medium-sized mixing bowl, stir together the chicken, mini pepperoni, mixed toppings, mozzarella, and half of the marinara sauce until well blended.
04 -
Spoon equal portions of the filling onto the center of each dough piece, leaving a clean border of 1/2 inch around the sides.
05 -
Blend the egg and milk together in a bowl to make the egg wash. Brush it along the edges closest to the filling, fold the dough over, and press the edges to close tightly. Place the pockets on the prepared tray.
06 -
Coat the tops of the pockets with the egg wash, sprinkle some Parmesan, and cut a tiny slit on top of each pocket to let steam escape in the oven.
07 -
Put the pizza pockets in the oven for around 20 minutes or until they've turned golden and the dough is fully cooked through.
08 -
Once done, pull them out of the oven, top with dried oregano or pizza spice, and enjoy with the remaining marinara for dipping.
