Preheat the oven to 190°C (375°F).

Halve and pit the peaches. Peel if desired for a smoother texture.

Place the peach halves, cut side up, in a baking dish.

In a small bowl, combine the granulated sugar, brown sugar, and ground cinnamon. Stir to blend evenly.

Drizzle the melted butter and vanilla extract over the peach halves.

Sprinkle the cinnamon sugar mixture evenly over each peach half.

Drip lemon juice over the peaches and season with a pinch of salt.

Cover the baking dish loosely with aluminum foil and bake for 25–30 minutes until peaches are tender and syrupy.

Remove the foil for the last 5 minutes to allow caramelization on top of the peaches.

Remove from the oven and let rest for 10 minutes before serving warm.
