Preheat the oven to 220°C.

In a large bowl, mix flour, salt, and sugar. Add cold diced butter and blend until the mixture resembles coarse crumbs. Stir in ice water, adding just enough for the dough to come together. Divide dough in half and roll each portion out on a floured surface.

In a separate bowl, combine sliced apples, sugar, flour, cinnamon, nutmeg, and lemon juice. Gently toss until apples are evenly coated.

Line a 23 cm pie pan with one sheet of dough. Fill with the apple mixture. Cover with the remaining dough, seal and crimp the edges, and cut a few small slits in the top to allow steam to escape.

Bake for 15 minutes at 220°C, then reduce oven temperature to 175°C and bake for an additional 35 to 45 minutes, until the crust is golden and the filling is bubbling.
