Corn Zucchini Summer Bowl (Print)

A smooth, veggie-loaded summer treat with sweet corn, garden zucchini, tender potatoes and crunchy bacon that's great for any meal.

# Ingredients:

→ Base

01 - 4 pieces bacon, fried crispy and broken into chunks
02 - 1/2 big yellow onion, chopped
03 - 2 stalks celery, chopped small
04 - 5 cobs corn, kernels scraped off
05 - 4 cloves garlic, finely chopped
06 - 5 cups chicken broth, low sodium type

→ Vegetables

07 - 2 russet potatoes, skinned and diced into small cubes
08 - 1 big zucchini, cut in quarters then sliced
09 - 1 big yellow squash, cut in quarters then sliced

→ Seasonings

10 - 1 1/4 teaspoons sea salt, kosher variety
11 - 1/2 teaspoon black pepper, ground
12 - 1/2 teaspoon paprika
13 - 1/2 teaspoon parsley, dried
14 - 1/4 teaspoon thyme
15 - 1/8 teaspoon cayenne pepper

→ Dairy

16 - 2 cups milk or half and half

# Steps:

01 - Put a big pot on medium heat. Toss in bacon and fry until crunchy, roughly 5 minutes.
02 - Throw in onion and celery, cook for 3 minutes, then add corn and keep cooking for 4 more minutes. Mix in garlic and cook until you can smell it, about a minute.
03 - Add chicken broth and turn up the heat to medium-high. When it starts bubbling, drop in potatoes with salt, pepper, paprika, parsley, thyme, and cayenne. Lower heat to medium and let it cook for 10 minutes.
04 - Drop in the zucchini and yellow squash. Let everything cook until potatoes feel soft with a fork and the squash is done, about 10-12 minutes.
05 - Scoop out 2 cups of the mixture into a blender. Blend until smooth, about 1-2 minutes. Pour this back into the pot and stir in the milk. Mix well, then take off the heat.
06 - Give the soup 10 minutes to rest before you eat it so all the flavors can mix together.

# Additional Notes:

01 - Keep leftovers in a sealed container in the fridge for up to 3 days.
02 - You can freeze this soup for up to 2 months, but don't freeze it with dairy as it might get weird.
03 - Warm it up on the stove over medium heat, stirring now and then, or nuke it in 30-second bursts.
