Cheesy Chicken Rice Bowl (Print)

# Ingredients:

→ Chicken Prep

01 - Four chicken breasts with no skin or bones
02 - A teaspoon of onion powder
03 - One teaspoon of garlic powder
04 - A teaspoon of smoked paprika
05 - Salt and pepper as you like it
06 - Two tablespoons of olive oil

→ Rice Base

07 - A cup of white rice (long-grain)
08 - Two cups of stock made from chicken
09 - Half a teaspoon of salt

→ Creamy Sauce

10 - Two spoons of butter, not salted
11 - Two tablespoons of plain flour
12 - One and a half cups of milk (whole)
13 - Half a cup of chicken broth
14 - Half a teaspoon of garlic powder
15 - A quarter teaspoon of thyme
16 - A half-cup of shredded cheddar
17 - Half a cup of Parmesan, grated
18 - Chopped parsley to scatter on top

# Steps:

01 - Coat the chicken breasts with a mix of smoked paprika, garlic powder, onion powder, and some salt and pepper.
02 - Warm olive oil in a big skillet over medium to high heat. Cook the chicken on each side for 4-5 minutes until it gets a nice golden color. Take the chicken out and keep it aside.
03 - Heat up the chicken stock with salt in a medium pan until it starts boiling. Add the rice, turn the heat to low, cover it, and let it cook for about 15-18 minutes till the rice is soft and the stock is soaked up. Fluff it up using a fork when it's done, then set it to cool.
04 - Use the frying pan where you cooked the chicken and melt butter on medium heat. Stir in the flour and cook it for a minute or two until it's a light golden shade.
05 - Pour the milk and chicken broth bit by bit into the pan while mixing nonstop, so the sauce stays smooth. Toss in the garlic powder, thyme, cheddar, and Parmesan. Let it cook for 3-4 minutes so the sauce thickens and the cheese melts completely.
06 - Put the chicken breasts back into the pan, then lay the creamy sauce over the top. Cover it and cook on low heat for around 10 minutes so it softens and fully cooks.
07 - Spoon some of the cooked rice onto a plate, add the chicken covered in sauce on top, and sprinkle some fresh parsley before serving.

# Additional Notes:

01 - Rest the chicken for a few minutes before serving to keep it juicy. If the sauce becomes too thick, just mix in a splash of milk or broth to thin it out.
