Honey Feta Chicken (Print)

Crunchy breaded chicken finished with soft feta and coated with spicy-sweet honey for a beautiful mix of tastes and textures.

# Ingredients:

→ Hot Honey

01 - 110g honey (1/3 cup)
02 - 1 1/2 tsp hot sauce (try Cholula or Frank's)
03 - 3/4 tsp red pepper flakes

→ Chicken

04 - 2 chicken breasts (500g/18oz total)
05 - 2 tsp paprika
06 - 1 tsp salt
07 - 1/2 tsp onion powder
08 - 1/2 tsp garlic powder
09 - 1/2 tsp dried oregano
10 - 1/2 tsp black pepper
11 - 1/4 tsp cayenne pepper
12 - 35g plain flour (1/4 cup)
13 - 2 eggs, beaten
14 - 65g panko breadcrumbs (1 cup)
15 - 6-8 tbsp vegetable oil, for frying
16 - 200g feta cheese, crumbled (7oz)

# Steps:

01 - Mix together honey, hot sauce and red pepper flakes in a bowl. Heat for 20 seconds in microwave or warm on stovetop until it bubbles slightly. Mix well and let it cool down so flavors can blend together.
02 - Cut each chicken breast through the middle sideways to make 4 thin pieces. Grab a small bowl and combine paprika, salt, onion powder, garlic powder, oregano, black pepper, and cayenne pepper.
03 - Put out 3 wide, shallow dishes: first one with flour mixed with half your spice blend, second with whisked eggs, and third with panko mixed with the rest of your spices. Put a big tray at the end.
04 - Take each piece of chicken and roll it fully in the flour mix, then dip completely in egg, and finally coat with the seasoned breadcrumbs. Put each finished piece on your tray.
05 - Pour enough oil to cover the bottom of a big pan and heat on medium-high. When a breadcrumb sizzles right away when dropped in, add your chicken pieces. Don't crowd the pan. Cook 3-4 minutes each side until they're golden brown and fully cooked. Move to a wire rack when done.
06 - Sprinkle lots of crumbled feta on top of each chicken piece. Put under a hot broiler until the cheese gets golden, melty and slightly crunchy on top.
07 - Pour some spicy honey over your chicken depending on how much heat you want, and eat right away. You can keep any extra honey in the fridge in a closed container.

# Additional Notes:

01 - You can make the spicy honey days ahead and keep it cold. If you want it spicier after tasting, just stir in more pepper flakes or hot sauce.
02 - Want to skip frying? First brown the breadcrumbs on a tray with a bit of oil spray at 180°C/350°F for 5 minutes. Bread your chicken as normal, put on a baking tray with oil spray and cook at 220°C/430°F for 10 minutes. Flip, spray again, cook 8-10 more minutes till done, then add feta and broil.
