Turn your oven on to 425°F (220°C). Put a baking sheet inside so it heats up too.

Cut the sweet potatoes into fry-sized pieces around 1/4 inch thick. Peeling them is up to you! Keep them similar in size for better cooking.

Add the fries to a bowl of cold water for half an hour. Getting rid of extra starch here is really what makes them crispy.

After soaking, drain the fries and use a paper towel to pat them dry. Toss them in a big bowl with olive oil, garlic powder, paprika, salt, and pepper. If you're adding cornstarch, sprinkle it in and mix to coat evenly.

Carefully pull out the hot baking sheet. Lay out the fries in one single layer so they have space. Pop them in the oven for 25-30 minutes, flipping halfway, until they’re nice and crispy with golden edges.

Once the fries look golden and perfectly crisp, take them out. Allow them to cool down for a moment, then enjoy!
