01 - 4 large eggs
02 - 2/3 cup milk
03 - 1/4 cup all-purpose flour
04 - 1/4 cup granulated sugar
05 - 1/4 teaspoon salt
06 - 1 teaspoon ground cinnamon
07 - 1 teaspoon vanilla extract
08 - 8 thick slices of bread (e.g., Texas Toast)
09 - 2 heaping cups crispy rice cereal or crushed corn flakes

# Steps:

01 - Preheat griddle to 350°F or heat a skillet over medium heat.
02 - Add cereal to a shallow pie dish or plate.
03 - Combine eggs, milk, flour, sugar, salt, cinnamon, and vanilla extract in a blender or a shallow dish. Blend or whisk thoroughly. If whisking by hand, some small lumps of flour are okay.
04 - Dip each piece of bread into the egg mixture on both sides, then press gently into the cereal on both sides to coat.
05 - Melt a small piece of butter in a skillet or griddle over medium heat. Place coated bread slices onto the hot surface and cook for a few minutes until golden brown on one side. Flip and cook the other side until golden.
06 - Serve warm with your favorite syrup or toppings.
