Preheat griddle to 350°F or heat a skillet over medium heat.

Add cereal to a shallow pie dish or plate.

Combine eggs, milk, flour, sugar, salt, cinnamon, and vanilla extract in a blender or a shallow dish. Blend or whisk thoroughly. If whisking by hand, some small lumps of flour are okay.

Dip each piece of bread into the egg mixture on both sides, then press gently into the cereal on both sides to coat.

Melt a small piece of butter in a skillet or griddle over medium heat. Place coated bread slices onto the hot surface and cook for a few minutes until golden brown on one side. Flip and cook the other side until golden.

Serve warm with your favorite syrup or toppings.
