Butter one side of each slice of sourdough bread evenly.

Preheat a non-stick skillet over medium heat until hot.

Place two slices of bread in the skillet, buttered side down.

Layer sharp cheddar cheese, mozzarella cheese, and dill pickles evenly on the bread slices in the skillet. Optionally spread Dijon mustard over the cheese layer.

Cover with the remaining slices of bread, buttered side up.

Cook until the bottom is golden brown, then flip and continue grilling until the cheese has melted and the bread is crisp and golden on both sides.

Remove from heat, slice the sandwiches in half, and serve warm.
