Blend chopped dragonfruit with warm water until completely smooth.

Heat granulated sugar with 240 ml of the cold water in a saucepan over medium heat, stirring until the sugar fully dissolves. Remove from heat and cool.

In a large pitcher, mix fresh lemon juice with the cooled simple syrup and remaining cold water.

Strain the dragonfruit puree through a fine-mesh strainer directly into the pitcher. Stir thoroughly to blend.

Refrigerate the pitcher for at least 2 hours to allow flavours to meld and drink to chill.

Add ice cubes to glasses or pitcher just before serving. Garnish each serving with lemon slices, mint leaves, and dragonfruit cubes as desired.
