Easy Layered Bean Dip (Print)

Creamy blend of seasoned beans, cheeses, and tomatoes—perfect with tortilla chips for any gathering.

# Ingredients:

→ Base Mixture

01 - 225 g cream cheese, softened
02 - 120 ml sour cream
03 - 2 tablespoons taco seasoning, divided

→ Bean Layer

04 - 450 g canned refried beans

→ Vegetables

05 - 2 x 285 g cans diced tomatoes with green chilies (Rotel), well drained

→ Cheese

06 - 100 g shredded cheddar cheese
07 - 100 g shredded Monterey Jack or pepper jack cheese

→ Suggested Toppings

08 - Fresh cilantro, chopped
09 - Spring onions, sliced
10 - Red onions, finely diced
11 - Diced tomatoes
12 - Jalapeño peppers, sliced

# Steps:

01 - Set oven to 175°C.
02 - In a medium bowl, blend the softened cream cheese with sour cream until smooth. Stir in 1 tablespoon of taco seasoning until evenly incorporated.
03 - Spread the cream cheese and sour cream mixture evenly at the bottom of a 23 x 33 cm baking dish.
04 - Combine refried beans with the remaining 1 tablespoon of taco seasoning. Mix until well blended.
05 - Gently spread the seasoned refried beans over the cream cheese layer.
06 - Pat the drained diced tomatoes dry using paper towels to remove excess moisture. Distribute them evenly over the bean layer.
07 - Top with an even layer of shredded cheddar and Monterey Jack cheeses.
08 - Cover the dish with aluminium foil and bake for 20 minutes.
09 - Remove the foil and bake an additional 5 minutes, or until the cheese is fully melted and bubbly.
10 - Remove from the oven. Sprinkle with desired toppings such as cilantro, spring onions, red onions, extra tomatoes, and jalapeños. Serve immediately with tortilla chips.

# Additional Notes:

01 - For best flavour and texture, shred cheese from a block rather than using pre-shredded varieties.
02 - Thoroughly dry tomatoes after draining to avoid excess moisture in the layers.
03 - Adjust the heat level by selecting mild, medium, or hot diced tomatoes as preferred.
04 - The dish can be assembled up to 2 days in advance and refrigerated before baking.
05 - Serve alongside salsa, guacamole, and fresh tortilla chips for the best experience.
