Set oven to 175°C.

In a medium bowl, blend the softened cream cheese with sour cream until smooth. Stir in 1 tablespoon of taco seasoning until evenly incorporated.

Spread the cream cheese and sour cream mixture evenly at the bottom of a 23 x 33 cm baking dish.

Combine refried beans with the remaining 1 tablespoon of taco seasoning. Mix until well blended.

Gently spread the seasoned refried beans over the cream cheese layer.

Pat the drained diced tomatoes dry using paper towels to remove excess moisture. Distribute them evenly over the bean layer.

Top with an even layer of shredded cheddar and Monterey Jack cheeses.

Cover the dish with aluminium foil and bake for 20 minutes.

Remove the foil and bake an additional 5 minutes, or until the cheese is fully melted and bubbly.

Remove from the oven. Sprinkle with desired toppings such as cilantro, spring onions, red onions, extra tomatoes, and jalapeños. Serve immediately with tortilla chips.
