01 - 8.8 ounces Thai vermicelli rice noodles
02 - 2 tablespoons canola oil
03 - 1 pound meat chops, sliced into bite-sized pieces
04 - 1 yellow onion, diced
05 - 6 cloves garlic, minced
06 - 2 tablespoons soy sauce
07 - 1 cup chicken stock
08 - 2 cups shredded cabbage
09 - 1/2 cup sliced carrots
10 - 3 green onions, diced
11 - Kosher salt and cracked black pepper to taste

# Steps:

01 - Soak rice noodles according to package directions.
02 - Cut meat and vegetables into uniform sizes for even cooking.
03 - Heat canola oil in a wok or large sauté pan. Add meat, diced yellow onion, minced garlic, and soy sauce. Cook for 3-5 minutes or until the meat is browned. Season with salt and pepper.
04 - Add chicken stock, shredded cabbage, sliced carrots, and diced green onions to the pan. Cook for 3-5 minutes, stirring occasionally, until the vegetables are softened.
05 - Add the soaked rice noodles to the meat and vegetable mixture. Toss thoroughly to combine. Adjust seasoning with salt and pepper if needed. Serve immediately.
