Toss the shrimp with buttermilk in a mixing bowl. Let it sit for at least 10 minutes to soften them up.

In a separate bowl, stir together sweet chili sauce, sriracha, honey, vinegar, lime zest, and lime juice. Set it to the side.

Combine cornstarch, garlic powder, black pepper, and salt in a big bowl. Take each shrimp and give it a good coating, shaking off the extra.

In a big pan, heat your oil over medium until it hits 350°F (177°C). Fry a few shrimp at a time for 2 minutes or so, flipping once. Don’t overcrowd the pan.

Take the shrimp out and lay them on a plate with paper towels or a wire rack to soak up the extra oil.

Put the cooked shrimp into a large bowl. Pour your sauce over them and gently toss until they're all coated. Sprinkle with chopped green onions if you like. Serve right away!
