Buttery Steak Bites (Print)

Tender beef chunks bathed in savory garlic butter paired with smooth, cheese-coated pasta — a fancy yet doable weeknight meal.

# Ingredients:

→ For the Steak Chunks

01 - 1 lb ribeye or sirloin steak, diced into small chunks
02 - 3 tablespoons butter
03 - 3 cloves garlic, finely chopped
04 - 1 tablespoon olive oil
05 - Salt and pepper, as needed
06 - 1 teaspoon paprika (if you want)
07 - 2 tablespoons chopped fresh parsley (for topping)

→ For the Rich Parmesan Pasta

08 - 225g your preferred pasta or fettuccine
09 - 2 tablespoons butter
10 - 3 cloves garlic, finely chopped
11 - 240ml heavy cream
12 - 100g parmesan cheese, freshly grated
13 - Salt and pepper, as needed
14 - 120ml pasta cooking water (if needed)
15 - Fresh parsley, for topping

# Steps:

01 - Get a big pot of salty water boiling. Cook your pasta till it's just right. Save about ½ cup of the water before draining. Put the pasta aside for now.
02 - Pour 1 tablespoon olive oil into a cast iron pan on medium-high. Add salt, pepper, and paprika to your steak chunks. Cook them without crowding for about 2-3 minutes each side until they're nice and brown. Take them out and set them aside.
03 - Using that same pan, turn the heat down to medium. Drop in 3 tablespoons butter, then add your chopped garlic and let it cook for half a minute. Put the steak chunks back in and mix them around in the buttery garlic for a minute or two. Then take the pan off the heat.
04 - In another pan, melt 2 tablespoons butter on medium. Toss in your chopped garlic and let it sizzle for 30 seconds. Add the heavy cream and stir till it gets a bit thick, around 3-4 minutes. Mix in your parmesan and add salt and pepper how you like it. If it's too thick, splash in some of that pasta water bit by bit.
05 - Stir your pasta into the cheesy sauce so it's all covered. Put pasta on plates and add the garlicky steak chunks on top. Sprinkle with fresh parsley and extra parmesan before you dig in.

01 - You get the best of both worlds with this meal: tender steak chunks and creamy pasta. It's fast enough for busy nights but fancy enough when friends come over.
