Combine salt, black pepper, garlic powder, dried oregano, and dried thyme. Rub evenly over chicken breasts.

Heat olive oil in a skillet over medium-high heat. Sear chicken breasts for 2-3 minutes per side until golden brown. Remove and set aside.

In the same skillet, sauté minced garlic for 1-2 minutes until aromatic.

Layer halved baby potatoes in the crockpot. Season with salt and black pepper.

Place the seared chicken breasts atop the potatoes within the crockpot.

Pour chicken broth evenly over the chicken and potatoes. Sprinkle grated Parmesan cheese on top.

Cover and cook on low for 6-7 hours or on high for 3-4 hours, until chicken is fully cooked and potatoes are tender.

Add fresh spinach to the crockpot about 30 minutes before serving and allow it to wilt.
