01 - 3 medium zucchinis, sliced into 6 mm thick rounds
02 - 2 tablespoons olive oil
03 - 2 cloves garlic, minced
04 - 60 g grated Parmesan cheese
05 - 0.5 teaspoon Italian seasoning
06 - 0.5 teaspoon salt
07 - 0.25 teaspoon black pepper

08 - Fresh parsley, chopped

# Steps:

01 - Set oven to 200°C and line a baking sheet with parchment paper.
02 - In a large bowl, toss zucchini rounds with olive oil and minced garlic until evenly coated.
03 - Sprinkle grated Parmesan, Italian seasoning, salt, and black pepper over the zucchini. Mix thoroughly to ensure even distribution.
04 - Lay seasoned zucchini rounds in a single layer on the prepared baking sheet, ensuring slices do not overlap.
05 - Roast in the preheated oven for 15–20 minutes, or until zucchini is tender and Parmesan is golden brown.
06 - Remove tray from oven and allow zucchini to cool for 5 minutes. Transfer to a serving dish.
07 - Top with freshly chopped parsley if desired, and serve warm.
