01 - 1 lb lean ground beef
02 - 2 cups elbow macaroni
03 - 1 large onion, finely chopped
04 - 1 red bell pepper, diced
05 - 1 green bell pepper, diced
06 - 3 cloves garlic, minced
07 - 15 oz tomato sauce
08 - 14.5 oz diced tomatoes, fire-roasted preferred
09 - 1 cup shredded cheddar cheese
10 - 2 tsp Italian seasoning
11 - Salt and pepper to taste

# Steps:

01 - Heat olive oil in a large pot over medium heat and sauté chopped onions and minced garlic until fragrant.
02 - Add ground beef to the pot, break it apart with a spoon, and cook until browned.
03 - Stir in diced red and green bell peppers along with salt and pepper; cook for 3-5 minutes until softened.
04 - Mix in tomato sauce, diced tomatoes, and Italian seasoning; stir well.
05 - Add elbow macaroni to the pot with enough water to cover by an inch; bring the mixture to a boil.
06 - Reduce heat and simmer for 10-12 minutes until the pasta is tender.
07 - Remove the pot from heat, sprinkle shredded cheddar cheese on top, cover briefly until melted, and serve.
