Lime Cake with Green Topping (Print)

A bright, juicy cake packed with lime flavor, finished with a silky condensed milk topping for a cool summer delight.

# Ingredients:

→ Cake

01 - 1g salt
02 - 8g baking powder
03 - 150g white sugar
04 - 180g plain flour
05 - 24g lime gelatin powder
06 - 1 tablespoon grated lime peel
07 - 60g fresh lime juice
08 - 75g neutral cooking oil
09 - 180g room-temp milk
10 - 2 large eggs, not cold

→ Lime Frosting

11 - 30g hot water
12 - 12g lime gelatin powder
13 - 80g fresh lime juice
14 - 397g sweetened condensed milk

# Steps:

01 - Preheat the oven to 180°C (350°F) about 5 minutes before use. Line an 8-inch (20cm) square baking pan with parchment and put it aside.
02 - Crack the eggs into a big bowl and whisk them for about a minute. Throw in the milk, oil, lime juice, zest, and lime gelatin powder. Stir everything together until it’s smooth.
03 - Sift the flour, sugar, baking powder, and salt straight into the bowl of wet ingredients. Mix it gently until smooth and just combined. Don’t overdo the stirring.
04 - Pour the mixture into your lined pan, then pop it in the heated oven. Bake for 30 minutes or until a toothpick stuck in comes out clean. Let it cool down to room temp.
05 - Stir together lime juice and condensed milk in a medium bowl. It’ll get a little thicker as the acid works.
06 - Dissolve the lime gelatin powder in the hot water by stirring it really well. Mix this into the condensed milk blend until combined.
07 - Spread the frosting flat across the cooled cake. Put it in the fridge for a couple of hours before cutting and serving.
