Preheat the oven to 180°C (350°F) about 5 minutes before use. Line an 8-inch (20cm) square baking pan with parchment and put it aside.

Crack the eggs into a big bowl and whisk them for about a minute. Throw in the milk, oil, lime juice, zest, and lime gelatin powder. Stir everything together until it’s smooth.

Sift the flour, sugar, baking powder, and salt straight into the bowl of wet ingredients. Mix it gently until smooth and just combined. Don’t overdo the stirring.

Pour the mixture into your lined pan, then pop it in the heated oven. Bake for 30 minutes or until a toothpick stuck in comes out clean. Let it cool down to room temp.

Stir together lime juice and condensed milk in a medium bowl. It’ll get a little thicker as the acid works.

Dissolve the lime gelatin powder in the hot water by stirring it really well. Mix this into the condensed milk blend until combined.

Spread the frosting flat across the cooled cake. Put it in the fridge for a couple of hours before cutting and serving.
