Beef and Potato Mix (Print)

A warming mix of spiced beef, chunky potatoes and melty cheese that cooks up all gooey and delicious in just under 60 minutes.

# Ingredients:

01 - 4 medium potatoes
02 - 1 pound of ground beef
03 - 1 cup of sour cream
04 - 1 medium onion
05 - 1/2 cup of beef stock
06 - 2 garlic cloves
07 - 1 cup of shredded cheddar cheese

→ Seasonings and Oil

08 - 1/2 teaspoon of paprika
09 - 1 teaspoon of dried thyme
10 - 1 tablespoon of olive oil
11 - 1/2 teaspoon of black pepper
12 - 1 teaspoon of salt

# Steps:

01 - Set your oven to 375°F (190°C) and let it warm up.
02 - Chop up the onion, dice the potatoes into small chunks, and mince the garlic.
03 - Heat some olive oil in a big skillet over medium heat. Toss in the garlic and onion, and cook until their smell fills the air.
04 - Put the ground beef into the skillet and season it with paprika, thyme, black pepper, and salt. Keep cooking until it's browned all over.
05 - Pour in the beef stock and stir everything well. Let it cook for a little while and then turn off the heat.
06 - Take a bowl and mix the potatoes and beef mixture together. Add half the cheddar cheese and all the sour cream, and gently fold it in.
07 - Spread the mixture out into a baking dish, making sure the top is even. Add the rest of the cheddar cheese on top.
08 - Cover the dish tightly using foil and let it bake in the oven for about 30 minutes.
09 - Take the foil off and let it bake for about 10-15 minutes more, or until the cheese is melted and golden.
10 - Take the dish out of the oven and leave it alone for a few minutes before scooping it up to serve.

# Additional Notes:

01 - Keep the potato pieces about the same size so they cook evenly.
02 - For a crunchy topping, broil the dish for a couple of minutes after taking off the foil.
03 - Use cream cheese or heavy cream instead of sour cream if you want it creamier.
04 - You can add extra veggies like carrots, peas, or peppers for more taste and nutrients.
05 - Throw in some cayenne or chopped chili if you like a bit of heat.
