Set your oven to 375°F (190°C) and let it warm up.

Chop up the onion, dice the potatoes into small chunks, and mince the garlic.

Heat some olive oil in a big skillet over medium heat. Toss in the garlic and onion, and cook until their smell fills the air.

Put the ground beef into the skillet and season it with paprika, thyme, black pepper, and salt. Keep cooking until it's browned all over.

Pour in the beef stock and stir everything well. Let it cook for a little while and then turn off the heat.

Take a bowl and mix the potatoes and beef mixture together. Add half the cheddar cheese and all the sour cream, and gently fold it in.

Spread the mixture out into a baking dish, making sure the top is even. Add the rest of the cheddar cheese on top.

Cover the dish tightly using foil and let it bake in the oven for about 30 minutes.

Take the foil off and let it bake for about 10-15 minutes more, or until the cheese is melted and golden.
