Honey Butter Rice Cakes (Print)

Buttery rice blended with honey makes these sweet squares perfect for snacks or a lovely dessert.

# Ingredients:

→ Base Mixture

01 - 400 grams cooked white rice
02 - 28 grams unsalted butter, softened
03 - 30 millilitres honey
04 - 5 millilitres vanilla extract
05 - 1 gram salt
06 - 1.5 grams ground cinnamon (optional)

→ Topping

07 - 30 grams chopped nuts or seeds (optional)

# Steps:

01 - In a large mixing bowl, thoroughly combine the cooked white rice, softened unsalted butter, honey, vanilla extract, salt, and ground cinnamon if using. Mix until the rice is evenly coated and all ingredients are fully incorporated.
02 - Line an 20 x 20 centimetre baking dish with parchment paper, ensuring the paper overhangs for easy removal.
03 - Transfer the rice mixture into the prepared dish. Using a spatula or clean hands, press the mixture firmly and evenly to create a compact layer. Cover with plastic wrap and refrigerate for at least 60 minutes to allow the mixture to set.
04 - Once sufficiently chilled, remove the set rice slab from the dish using the parchment paper. Cut into uniform squares or rectangles. If desired, sprinkle chopped nuts or seeds over the top for added texture and flavor.
05 - Serve immediately, or transfer pieces to an airtight container and refrigerate for up to three days.

# Additional Notes:

01 - For a chocolate variant, incorporate 15 grams of cocoa powder before pressing the mixture into the dish.
02 - Maple syrup may replace honey for a different sweetness profile; for a vegan version, use agave syrup and plant-based butter.
