Spread ricotta cheese evenly on one side of each bread slice. Arrange sliced peaches over half the bread, drizzle with honey, and layer white cheddar cheese on the remaining bread slices.

Coat the outer sides of each bread slice with unsalted butter for even browning.

Preheat a panini press or large skillet over medium-low heat. Place the assembled sandwiches in the pan. Cook gently until the bread is golden and cheese is completely melted, lowering the heat if the bread colors too quickly.

If desired, briefly lift the top bread slice and add crispy bacon, fresh basil leaves, or a drizzle of balsamic glaze over the melted cheese. Cover with bread.

Cut each sandwich in half and serve immediately while hot for optimal taste and texture.
