Basil Chicken Cutlets (Print)

Golden chicken cutlets loaded with fresh basil and gooey cheese, smothered in marinara and baked till the cheese turns bubbly.

01 - 1 cup marinara sauce
02 - 2 large eggs
03 - 1/4 cup chopped fresh basil
04 - 1 teaspoon black pepper
05 - 1/2 cup shredded mozzarella
06 - 1 cup breadcrumbs
07 - 2 boneless, skinless chicken breasts
08 - 2 tablespoons milk
09 - 1 tablespoon olive oil
10 - 1 cup all-purpose flour
11 - 1 teaspoon salt
12 - 1/2 cup Parmesan cheese, grated

# Steps:

01 - Turn on your oven and heat it to 375°F (190°C).
02 - Heat up a big skillet on medium and pour in the olive oil.
03 - Remove any extra fat from the chicken, then carefully slice it horizontally into thinner pieces.
04 - In a shallow bowl, combine the flour, black pepper, and salt. Stir it all together.
05 - Break the eggs into another dish, add the milk, and whisk until it’s smooth.
06 - Take another dish and mix the breadcrumbs with the Parmesan cheese and fresh basil.
07 - Dip each piece of chicken into the flour blend, pressing lightly to coat evenly.
08 - Place the floured chicken into the egg mix and let any extra liquid drip off.
09 - Roll the chicken in the breadcrumb mixture, making sure it sticks firmly.
10 - Slide the chicken cutlets into the hot skillet and fry them for 3-4 minutes on each side, or until golden and cooked through.
11 - Lay the cooked chicken onto a sheet lined with parchment paper.
12 - Spread a couple of spoonfuls of marinara sauce over the chicken pieces.
13 - Scatter the shredded mozzarella over the sauce on each chicken cutlet.
14 - Put the baking sheet in your heated oven and cook for about 5-7 minutes until the cheese melts and gets bubbly.
15 - When done, take the chicken out and leave it to sit for a few minutes.
16 - Serve the chicken hot, and feel free to add more marinara on top if you'd like.

01 - Cut the chicken evenly so it all cooks at the same rate.
02 - If you want extra flavor, toss in some garlic powder or Italian seasoning with the breadcrumbs.
