Hearty Italian Sausage Lasagna Soup (Print)

# Ingredients:

→ Soup Base

01 - 500 g Italian sausage, casings removed
02 - 2 tablespoons olive oil
03 - 1 large onion, diced
04 - 4 cloves garlic, minced
05 - 1 teaspoon dried oregano
06 - 1 teaspoon dried basil
07 - 0.5 teaspoon red pepper flakes
08 - 1 teaspoon salt
09 - 0.5 teaspoon black pepper
10 - 2 tablespoons tomato paste
11 - 800 g crushed tomatoes
12 - 1.25 litres chicken broth
13 - 200 g lasagna noodles, broken into pieces

14 - 250 g ricotta cheese
15 - 200 g shredded mozzarella cheese, divided
16 - 50 g grated Parmesan cheese
17 - 2 tablespoons fresh parsley, chopped
18 - Fresh basil leaves, for garnish

# Steps:

01 - Heat olive oil in a large pot over medium heat. Add Italian sausage and cook until browned, breaking it into small pieces with a spoon. Remove the sausage with a slotted spoon and set aside.
02 - In the same pot, add diced onion and sauté until translucent, about 5 minutes. Stir in garlic, dried oregano, dried basil, red pepper flakes, salt, and black pepper. Cook for 1 minute until fragrant.
03 - Stir in tomato paste and cook for 2 minutes, allowing it to integrate fully with the aromatics.
04 - Pour in the crushed tomatoes and chicken broth. Stir well to combine and bring the mixture to a simmer.
05 - Add broken lasagna noodles to the pot. Cook uncovered, stirring occasionally, until the noodles are tender, about 12–15 minutes.
06 - While the noodles are cooking, combine ricotta cheese, 100 g of shredded mozzarella, and grated Parmesan in a small bowl. Mix until well combined.
07 - Once noodles are cooked, return the browned sausage to the pot and stir well to combine.
08 - Ladle the soup into bowls. Top each serving with a generous scoop of the prepared cheese mixture.
09 - Sprinkle remaining mozzarella cheese over the hot soup and garnish with chopped parsley and fresh basil leaves.
