# Ingredients:

01 - 1 bag (540 g) frozen cheese tortellini

→ Chicken

02 - 2 tablespoons olive oil
03 - 680 g boneless, skinless chicken breasts, cut into bite-sized pieces
04 - 0.5 teaspoon black pepper
05 - 0.5 teaspoon Italian seasoning
06 - 0.5 teaspoon paprika

07 - 2 tablespoons butter
08 - 120 g sun-dried tomatoes in oil, drained and thinly sliced
09 - 3 teaspoons garlic, minced
10 - 240 ml low-sodium chicken broth
11 - 480 ml heavy cream
12 - 1 teaspoon Italian seasoning
13 - 1 teaspoon black pepper
14 - 1 teaspoon paprika
15 - 100 g parmesan cheese, finely shredded
16 - 60 g baby spinach, chopped

17 - Fresh parsley, chopped (optional)
18 - Extra parmesan cheese, for serving (optional)

# Steps:

01 - Combine chicken breast pieces with black pepper, Italian seasoning, and paprika. Mix to coat thoroughly and set aside.
02 - Heat olive oil in a large skillet over medium-high heat. Add seasoned chicken and cook for 6 to 8 minutes, stirring occasionally, until golden brown and cooked through. Transfer chicken to a plate and reserve.
03 - Reduce heat to medium-low. Melt butter in the same skillet, then add garlic and sun-dried tomatoes. Sauté for 30 seconds until fragrant.
04 - Pour in chicken broth and heavy cream. Add Italian seasoning, black pepper, and paprika. Whisk constantly until the sauce reaches a gentle simmer. Gradually add parmesan cheese, whisking until melted and fully incorporated.
05 - Return the cooked chicken to the skillet. Add chopped spinach and frozen cheese tortellini. Stir to combine. Simmer gently, stirring occasionally, until spinach wilts and tortellini are heated through, approximately 5 minutes.
06 - Remove from heat. Garnish with fresh parsley and extra parmesan cheese if desired. Serve immediately.
