My Nana’s Famous Green Beans (Print)

Green beans slow simmered with bacon, onion, and broth for a savory, comforting side at any meal.

# Ingredients:

01 - 900 g fresh green beans, rinsed and trimmed
02 - 120 g yellow onion, diced
03 - 8 slices streaky bacon, cut into small pieces
04 - 360 ml chicken broth or water
05 - Black pepper, to taste
06 - Salt, to taste

# Steps:

01 - Cut streaky bacon into small pieces and cook over medium heat in a heavy-bottomed 3-litre saucepan until the fat is fully rendered and the bacon is crisp.
02 - Add diced yellow onion to the saucepan and sauté with the bacon until onions become translucent.
03 - Add the green beans and a generous pinch of black pepper. Stir to coat the beans evenly in the rendered bacon fat.
04 - Pour in chicken broth or water. Reduce heat to low, cover, and cook for at least 30 minutes, up to 2 hours, stirring occasionally to prevent scorching and ensure even cooking. Check that there is always liquid in the saucepan.
05 - Taste and adjust seasoning with additional salt and pepper if desired. Serve hot.

01 - Allow the beans to simmer longer for a softer texture and deeper flavour. Stir occasionally to ensure even cooking and prevent burning.
