Cut streaky bacon into small pieces and cook over medium heat in a heavy-bottomed 3-litre saucepan until the fat is fully rendered and the bacon is crisp.

Add diced yellow onion to the saucepan and sauté with the bacon until onions become translucent.

Add the green beans and a generous pinch of black pepper. Stir to coat the beans evenly in the rendered bacon fat.

Pour in chicken broth or water. Reduce heat to low, cover, and cook for at least 30 minutes, up to 2 hours, stirring occasionally to prevent scorching and ensure even cooking. Check that there is always liquid in the saucepan.

Taste and adjust seasoning with additional salt and pepper if desired. Serve hot.
