Preheat oven to 200°C. Line a baking tray with parchment paper or grease lightly with cooking spray.

In a medium mixing bowl, combine shredded chicken, cream cheese, cheddar cheese or Mexican blend, salsa, taco seasoning, lime juice, and cilantro if using. Stir until the mixture is fully blended and creamy. Season well with salt and freshly ground black pepper.

Warm flour tortillas in the microwave for 10–15 seconds to soften and increase flexibility.

Place about 2 tablespoons of filling on each warmed tortilla. Roll tightly from end to end, setting each taquito seam-side down on the prepared tray.

Lightly spray or brush tops of taquitos with cooking spray or olive oil for crispier texture. Bake in the centre of the oven for 20–25 minutes, turning once halfway through, until golden brown and crisp.

Allow taquitos to cool briefly. Serve with guacamole, sour cream, salsa, diced tomatoes, or sliced jalapeños to your preference.
