Rinse and scrub the ginger with a cleaning brush or your fingers. Slice off the pineapple's crown, peel off the outer skin, then chop it into chunks.

Tear the ginger into smaller chunks. Toss it into the blender with a portion of pineapple and a splash of water to get it going. Blend the leftover pineapple chunks afterward. Pour the mix through a fine strainer set over a big bowl, pressing it down with a spatula.

Squeeze the juice out of the lemons, either with your hands or a citrus press. Pour the lemon juice and coconut water into the ginger-pineapple juice mix. Give it a good stir before serving.
