Combine granulated sugar, fresh Meyer lemon juice, and 480 millilitres water in a saucepan. Bring to a gentle boil over medium heat while stirring until the sugar has fully dissolved.

Remove saucepan from heat. Add fresh lavender sprigs and roughly sliced ripe strawberries. Allow mixture to steep for 15 minutes to extract flavours.

Strain the infused mixture into a large pitcher, discarding any solids. Add 480 millilitres ice-cold water and, if desired, a few drops of food grade lavender oil. Stir thoroughly to combine.

Pour over glasses filled with ice and serve immediately.
