Fill a pot with salted water and bring it to a boil. Cook the pasta until done, following the package directions. Scoop out 1 cup of the cooking water before draining.

Heat a pan over medium. Add olive oil, toss in the sausage, season with some salt and pepper, and break it up while cooking. Once crispy, move it onto a plate.

In the same pan, toss in the garlic, onions, and a little salt and pepper. Stir as they cook for about 5 minutes.

Add asparagus to the pan. Keep stirring while it cooks until the pieces are soft but still snappy, roughly 6 to 8 minutes. Add another small pinch of salt and pepper.

Move the cooked pasta into the pan. Pour in about ⅔ cup of the pasta water and mix with parmesan cheese until the sauce coats everything nicely.

Gently tear the burrata and mix it into the pasta. Sprinkle crushed red pepper on top and dig in right away.
