Crunchy Sausage Asparagus Pasta (Print)

Farfalle pasta paired with golden sausage, fresh asparagus, and soft burrata for a speedy and hearty Italian meal.

# Ingredients:

01 - 1 pound of sweet or spicy Italian sausage
02 - 1 tablespoon of olive oil
03 - ⅔ cup of the water from cooked pasta
04 - 1 pound of bow-tie pasta
05 - A pinch of kosher salt and black pepper to taste
06 - 4 minced garlic cloves
07 - 1 diced sweet onion
08 - ½ cup of finely shredded parmesan
09 - 8 ounces of burrata, torn into chunks
10 - 1 pound of asparagus, cut into thirds
11 - Some crushed red pepper flakes for serving

# Steps:

01 - Fill a pot with salted water and bring it to a boil. Cook the pasta until done, following the package directions. Scoop out 1 cup of the cooking water before draining.
02 - Heat a pan over medium. Add olive oil, toss in the sausage, season with some salt and pepper, and break it up while cooking. Once crispy, move it onto a plate.
03 - In the same pan, toss in the garlic, onions, and a little salt and pepper. Stir as they cook for about 5 minutes.
04 - Add asparagus to the pan. Keep stirring while it cooks until the pieces are soft but still snappy, roughly 6 to 8 minutes. Add another small pinch of salt and pepper.
05 - Move the cooked pasta into the pan. Pour in about ⅔ cup of the pasta water and mix with parmesan cheese until the sauce coats everything nicely.
06 - Gently tear the burrata and mix it into the pasta. Sprinkle crushed red pepper on top and dig in right away.

01 - Save some pasta cooking water to make the sauce creamy.
02 - Taste and adjust salt, pepper, and red pepper flakes before serving.
