Savory Italian Zuppa Toscana Soup (Print)

# Ingredients:

01 - 450 g Italian sausage (mild or spicy, as preferred)
02 - 1 tablespoon olive oil
03 - 1 large onion, diced
04 - 1 clove garlic, minced
05 - 240 ml chicken broth
06 - 1 medium russet potato, thinly sliced
07 - 100 g kale, chopped
08 - 240 ml heavy cream
09 - Salt, to taste
10 - Black pepper, to taste

12 - 50 g grated Parmesan cheese, for garnish

# Steps:

01 - In a large pot or Dutch oven, heat olive oil over medium heat. Add Italian sausage and cook until browned. Remove sausage from the pot using a slotted spoon and set aside.
02 - In the same pot, add diced onion and minced garlic. Sauté for approximately 5 minutes until the onion becomes translucent and the garlic is fragrant.
03 - Pour in chicken broth and bring to a boil. Add thinly sliced potato and reduce heat to a simmer. Cook for about 10 minutes or until potatoes are tender.
04 - Return cooked sausage to the pot along with chopped kale. Stir well and simmer for an additional 5 minutes.
05 - Reduce heat to low. Slowly stir in heavy cream and allow the soup to heat through without boiling.
06 - Season with salt and black pepper to taste. Add red pepper flakes for desired heat.
07 - Once thoroughly heated, remove pot from heat. Ladle soup into bowls and garnish with grated Parmesan cheese before serving.
