01 - 340 grams smoked sausage (chicken, pork, or turkey), sliced into rounds
02 - 2 medium sweet potatoes (approximately 450 grams), peeled and diced
03 - 1 cup (150 grams) mixed bell peppers, chopped
04 - 1 medium yellow onion, diced
05 - 3 cloves garlic, minced
06 - 2 tablespoons (30 ml) olive oil
07 - Salt, to taste
08 - Freshly ground black pepper, to taste
09 - 1/4 teaspoon cayenne pepper, optional

# Steps:

01 - Peel and dice the sweet potatoes. Slice the smoked sausage into rounds. Chop the bell peppers and onion. Mince the garlic.
02 - Heat olive oil in a large skillet over medium heat. Add the diced sweet potatoes, season with salt and pepper, and sauté for 8–10 minutes until they begin to soften.
03 - Add the sliced smoked sausage and diced onion to the skillet. Cook for 5 minutes until the sausage becomes slightly crispy and the onion starts to soften.
04 - Stir in the chopped bell peppers and minced garlic. Continue cooking for 5 minutes, allowing the vegetables to become tender-crisp.
05 - Adjust seasoning as desired and add cayenne pepper if using. Serve hot, garnished with fresh herbs if preferred.
