Warm up the olive oil in a big skillet over medium heat. Toss in the steak chunks and cook them until they’re browned all over. Take them out of the skillet and set aside.

Throw the diced onion into the same skillet, cooking it for about 5 minutes until it softens and turns a little clear. Stir in the garlic and cook for a minute, just until it smells nice.

Add the rice to the skillet along with the beef broth, thyme, and paprika. Let it heat up and reach a boil.

Turn the heat down low, cover it up, and let it cook for about 15-20 minutes. The rice should soak up the liquid and become tender.

Toss the cooked steak back in, sprinkle on the cheese, and mix until the cheese melts and everything’s well blended.

Taste and adjust with salt and pepper as needed. Garnish with fresh parsley before digging in.
