Preheat oven to 190°C and line a baking tray with parchment paper.

Unfold and roll out the puff pastry sheets on a lightly floured surface. Cut each sheet into 4 equal 10-centimetre squares.

In a mixing bowl, blend softened cream cheese, granulated sugar, and vanilla extract until smooth and creamy.

Spoon a generous portion of the cream cheese mixture onto the centre of each pastry square. Top the filling with sliced fresh strawberries.

Fold the corners of each square over the filling, gently pressing to seal the edges. Place the filled pastries onto the prepared baking tray.

Brush the tops of the pastries with beaten egg to ensure a glossy, golden finish.

Bake in the centre of the oven for 20–25 minutes, or until puffed and golden brown. Allow to cool slightly on a wire rack before serving.
