Stuffed Cheesecake Apple Pies (Print)

# Ingredients:

→ Apple Filling

01 - 2 apples, peeled and diced (Granny Smith or Honeycrisp)
02 - 2 tablespoons butter
03 - 2 tablespoons brown sugar
04 - ½ teaspoon cinnamon
05 - Pinch of nutmeg
06 - 1 teaspoon cornstarch mixed with 1 tablespoon water

→ Cheesecake Filling

07 - 4 ounces cream cheese, softened
08 - 2 tablespoons sugar
09 - ½ teaspoon vanilla extract

→ Assembly

10 - 1 pack refrigerated pie crusts, biscuit dough, or empanada wrappers
11 - Oil for frying
12 - Cinnamon sugar (¼ cup sugar mixed with 1 teaspoon cinnamon)
13 - Optional: caramel sauce or powdered sugar for topping

# Steps:

01 - In a small pan, melt butter over medium heat. Add diced apples, brown sugar, cinnamon, and nutmeg. Cook until apples are tender, about 5–7 minutes. Stir in the cornstarch slurry and cook for another 1–2 minutes until thickened. Let the mixture cool.
02 - In a bowl, mix cream cheese, sugar, and vanilla extract until smooth and creamy. Chill the mixture for easier handling.
03 - Roll out pie crust or flatten dough circles to about 4–5 inches in diameter. Place a spoonful of cheesecake filling and a spoonful of apple filling in the center. Fold the dough into a half-moon shape and seal the edges with a fork. Brush the edges with egg wash or water if needed to help seal.
04 - Heat 1–2 inches of oil in a skillet to 350°F (175°C). Fry the pies for 2–3 minutes on each side or until deep golden brown. Drain on paper towels.
05 - While still warm, toss the fried pies in cinnamon sugar. Serve as is or drizzle with caramel sauce or dust with powdered sugar, as desired.

01 - Use canned apple pie filling and pre-made cheesecake dip to save time.
02 - For an air fryer version, brush the pies with butter and air fry at 375°F for 8–10 minutes.
03 - Assemble the pies in advance, freeze them, and fry directly from frozen, adding a few extra minutes to the frying time.
