In a small pan, melt butter over medium heat. Add diced apples, brown sugar, cinnamon, and nutmeg. Cook until apples are tender, about 5–7 minutes. Stir in the cornstarch slurry and cook for another 1–2 minutes until thickened. Let the mixture cool.

In a bowl, mix cream cheese, sugar, and vanilla extract until smooth and creamy. Chill the mixture for easier handling.

Roll out pie crust or flatten dough circles to about 4–5 inches in diameter. Place a spoonful of cheesecake filling and a spoonful of apple filling in the center. Fold the dough into a half-moon shape and seal the edges with a fork. Brush the edges with egg wash or water if needed to help seal.

Heat 1–2 inches of oil in a skillet to 350°F (175°C). Fry the pies for 2–3 minutes on each side or until deep golden brown. Drain on paper towels.

While still warm, toss the fried pies in cinnamon sugar. Serve as is or drizzle with caramel sauce or dust with powdered sugar, as desired.
