Cut the sirloin into bite-sized pieces. Season evenly with garlic powder, smoked paprika, salt, and pepper.
02 -
Bring a large pot of salted water to a boil. Add pasta and stir. Cook until al dente, then reserve 125 ml pasta water. Drain using a colander.
03 -
Heat olive oil in a large skillet over medium-high heat. Sear steak pieces in batches, 2–3 minutes per side until deeply browned. Transfer to a plate and rest.
04 -
In the same skillet over medium heat, add butter. Once melted, add minced garlic and red pepper flakes. Sauté for 1 minute until fragrant.
05 -
Pour in heavy cream and honey. Stir and reduce heat to low. Simmer gently for 2–3 minutes.
06 -
Remove skillet from heat. Add Parmesan cheese and lemon juice, whisking until the sauce is smooth and cohesive.
07 -
Add drained pasta to the sauce, tossing to coat. Use reserved pasta water as needed for consistency. Fold in steak pieces along with their juices.
08 -
Sprinkle with chopped parsley and serve immediately while hot.
